Description

These Vegan Strawberry Cream Danishes are heart-shaped pastries made with flaky puff pastry, filled with a luscious dairy-free cream cheese mixture and topped with fresh strawberries. Perfect for Valentine’s Day, brunches, or anytime you want a fruity, plant-based treat that’s both beautiful and delicious.


Ingredients

  • 12 sheets of puff pastry (vegan & gluten-free recommended, such as Jus-Rol)
  • 130g dairy-free cream cheese (preferably full-fat)
  • 15g gluten-free or plain flour
  • 15g caster sugar (plus extra for sprinkling)
  • 4 tablespoons dairy-free milk (for brushing)
  • Fresh strawberries (sliced thinly)


Instructions

  1. Preheat the oven to 180°C (fan) and line two baking trays with greaseproof paper.
  2. Unroll the puff pastry sheet and gently flatten any wrinkles with a rolling pin.
  3. Using a large heart-shaped cookie cutter, cut out heart shapes from the pastry and place them on the lined trays.
  4. With a smaller heart cutter, press lightly into the center of each large heart to create an indented shape for the filling, without cutting through.
  5. In a mixing bowl, combine the dairy-free cream cheese, flour, and caster sugar until smooth and thick.
  6. Transfer the filling to a piping bag or spoon it into the indented areas of each heart.
  7. Top each with a few slices of fresh strawberries.
  8. Brush the edges of the pastry with dairy-free milk and sprinkle with a little caster sugar for browning.
  9. Bake in the middle of the oven for 10–15 minutes, or until golden and flaky.
  10. Allow to cool slightly, dust with icing sugar if desired, and serve warm or at room temperature.

Notes

  • Do not overfill the danishes to avoid leakage during baking.
  • Keep cream cheese chilled until use for a firmer texture.
  • You can glaze with apricot jam post-baking for extra shine.
  • These pastries are best enjoyed fresh but can be stored for up to 2 days.
