Description

Whipped Feta Bruschetta Dip is a vibrant appetizer featuring a creamy feta base topped with a tangy, sweet tomato mixture. It’s the perfect balance of savory and sweet, making it a great dish for any summer gathering or casual meal.


Ingredients

  • 1 cup diced heirloom cherry or grape tomatoes
  • 1 small garlic clove, finely minced
  • 6 large basil leaves, julienned
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • Freshly ground black pepper to taste
  • 1 demi French baguette, cut into 1/2 inch slices (about 10 slices)
  • 1 tablespoon extra virgin olive oil for crostini
  • 1 small garlic clove, peeled
  • 1 batch of Creamy Whipped Feta Dip (prepared with feta, yogurt, olive oil, lemon juice, and garlic)
  • Balsamic glaze for drizzling
  • 6-10 small basil leaves for garnish


Instructions

  1. Preheat the oven to 400ºF.
  2. Prepare the bruschetta topping by combining diced tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper in a medium-sized bowl. Set aside.
  3. For the crostini, arrange baguette slices on a baking sheet. Drizzle with olive oil and rub each slice with a peeled garlic clove. Bake for 6-8 minutes, or until golden brown and crispy.
  4. Prepare the whipped feta dip by blending the feta, yogurt, olive oil, lemon juice, garlic, salt, and pepper in a food processor until smooth. Transfer to a shallow bowl and smooth out with the back of a spoon.
  5. Assemble the dip by spooning the bruschetta mixture over the whipped feta base. Discard any excess liquid from the topping. Drizzle with balsamic glaze and garnish with basil leaves.
  6. Serve with the toasted crostini and enjoy immediately!

Notes

  • The whipped feta base can be made up to 3 days in advance and stored in an airtight container in the refrigerator.
  • Assemble the dip just before serving to keep the crostini crispy.
  • For a gluten-free version, swap out the baguette for gluten-free bread or crackers.
  • For a dairy-free version, skip the whipped feta base and enjoy the bruschetta topping on its own.
