Instructions
- Prepare the hot honey: In a small saucepan, combine honey, apple cider vinegar, hot sauce, minced garlic, and red pepper flakes. Stir over low heat until the mixture just starts to simmer. Remove from heat and allow to cool completely before using.
- Make the whipped feta: Add feta cheese, cream cheese, and cottage cheese to a food processor. Pulse a few times, then blend until smooth and creamy. Scrape down the sides as needed to ensure an even texture. Transfer the mixture to a bowl.
- Toast the bread: Arrange baguette slices on a baking sheet and toast in a preheated 375°F (190°C) oven for about 7–10 minutes, or until golden and crisp. Let them cool slightly before assembling.
- Assemble the crostini: Spread a generous amount of whipped feta onto each toasted baguette slice. Arrange them in a single layer on a serving platter for easy drizzling.
- Add the toppings: Sprinkle each crostini with chopped pecans and fresh rosemary. Drizzle the cooled hot honey generously over the top, allowing it to soak into the whipped feta slightly.
