Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened and translucent.
- Add the minced garlic and 1 tablespoon red curry paste. Cook for 1 minute, stirring constantly, until fragrant.
- Pour in the 14 oz coconut milk and 3 cups chicken broth. Stir well to combine and bring to a gentle simmer.
- Add the 2 cups shredded chicken, sliced red bell pepper, and 1 cup baby spinach. Simmer for 5–7 minutes until the vegetables are tender and the chicken is heated through.
- Stir in 1 tablespoon fish sauce, 1 tablespoon soy sauce, 1 tablespoon lime juice, and 1/2 teaspoon sugar. Taste and adjust seasoning if needed.
- Remove from heat and let rest for 2 minutes. Ladle into bowls and garnish with chopped cilantro and lime wedges before serving.
