It’s an ideal addition to your holiday spread, visually appealing and bursting with flavor.
Ingredients
Scale
- 16 oz cream cheese, softened
- 1.5 cups sharp cheddar, freshly grated
- ¾ cup dried cranberries, finely chopped
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- ½ tsp garlic powder
- ¼ tsp black pepper
- ¼ tsp kosher salt
- ¾ cup pecans, toasted and finely chopped (for ‘cap’)
- ½ cup crushed buttery crackers or blanched almonds (for ‘body’)
- 1 pretzel stick (for stem)
- 1 tsp honey or finely minced rosemary (optional, for garnish)
Instructions
- Toast the pecans in a dry skillet over medium heat for 4 to 5 minutes, stirring occasionally until fragrant. Allow them to cool completely.
- Beat the softened cream cheese in a mixing bowl until smooth. Add the grated sharp cheddar, finely chopped cranberries, Dijon mustard, Worcestershire sauce, garlic powder, black pepper, and salt. Mix until combined.
- Transfer the mixture to a piece of plastic wrap. Shape it into an oval with a pointed end, resembling an acorn. Chill in the refrigerator for 15 minutes to firm up.
- Roll the top third of the shaped cheeseball in the finely chopped toasted pecans to form the ‘cap.’ Roll the bottom two-thirds in crushed crackers or blanched almonds for the ‘body.’
- Press the pretzel stick into the top of the cheeseball to serve as the stem. Chill the cheeseball for 30 minutes to 2 hours to set.
- Transfer the cheeseball to a serving board and serve with crackers, apple slices, and celery sticks. Optionally drizzle honey or sprinkle minced rosemary for a finishing touch.
Notes
- Chill the cheeseball before coating to prevent smearing.
- Finely chop cranberries and nuts for cleaner slices and an even coat.
- If you prefer a firmer texture, refrigerate the cheeseball overnight and slice it with a warm knife.
- For smaller portions or faster chilling, make two smaller acorns instead of one large one.
