Description
A crispy, cheesy, beginner-friendly take on Olive Garden’s lasagna fritta, made healthier in the air fryer with five flavorful cheeses.

- 10 ounces Lasagna Noodles (about 10 noodles)
- 15 ounces Whole Milk Ricotta Cheese
- 1/2 cup Freshly Grated Parmesan Cheese
- 1/2 cup Freshly Grated Romano Cheese
- 1/2 cup Freshly Grated Asiago Cheese
- 1/2 cup Freshly Grated Mozzarella Cheese
- 2 tablespoons Italian Seasoning
- 2 Large Eggs (for filling and batter)
- 1 1/2 cups Italian Bread Crumbs or Panko
- 2 tablespoons Olive Oil
- 1/2 cup Finely Grated Parmesan (for coating)
- Olive Oil Spray (for air fryer method)
- Canola Oil (for pan-fried method)
- Jar of Marinara Sauce (for serving)
- Optional: Homemade Alfredo Sauce and extra Parmesan, Romano, or Asiago
Instructions
- Boil lasagna noodles according to package directions until al dente. Rinse with cold water and trim ribbon edges if needed.
- Mix ricotta, mozzarella, Parmesan, Romano, Asiago, one egg, and Italian seasoning in a large bowl to create the cheese filling.
- Lay noodles flat, spread cheese mixture on top, and roll into short logs or rectangular shapes. Freeze on parchment-lined tray for 1–2 hours.
- Whisk remaining egg in a shallow dish. In another dish, mix bread crumbs with olive oil and microwave until golden. Let cool, then add grated Parmesan.
- Dip frozen rolls into egg, then coat in breadcrumb mixture. Shake off excess and press crumbs gently to adhere.
- Spray air fryer basket with oil, place rolls inside, and spray tops with oil. Cook at 400°F for 8 minutes, flip, then cook another 6–8 minutes until golden and crispy.
- Serve immediately with marinara and/or Alfredo sauce, garnished with extra cheese if desired.
Notes
- Freezing the lasagna rolls before breading helps keep the shape and prevents cheese from leaking.
- Trim ribboned edges of noodles for easier rolling and better sealing.
- Breadcrumbs need a light oil coating to brown properly in the air fryer.
- Use tongs or a spatula to flip the fritta gently while cooking to avoid breakage.
- These can also be pan-fried or baked if you don’t have an air fryer.
