  • 1/2 cup brown sugar
  • 2 1/2 cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter (melted) or coconut oil
  • 2 to 3 large apples (peeled, cored, and diced)


Instructions

  1. Preheat the oven to 325°F (163°C) and lightly grease a baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  3. In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir well to combine.
  5. Add the melted butter or coconut oil and mix until evenly incorporated.
  6. Spread the diced apples evenly across the bottom of the prepared baking dish.
  7. Pour the oatmeal mixture over the apples, spreading evenly.

  9. Remove from the oven and let cool slightly before serving.
