Description
Apple and Walnut Tart with Caramel Sauce is a comforting autumn dessert made with crisp homemade pastry, tender baked apples, crunchy walnuts, warm cinnamon, and a silky salted caramel sauce. Serve it warm or at room temperature for a rich, elegant finish.
Ingredients
Scale
- 250 g all-purpose flour
- 80 ml neutral oil, walnut oil, or hazelnut oil
- 80 ml water
- 1 pinch salt
- 4 medium firm baking apples, about 600 g
- 100 g walnuts, coarsely chopped
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 teaspoon vanilla extract
- 100 g granulated sugar, for the caramel sauce
- 45 g unsalted butter, for the caramel sauce
- 120 ml heavy cream
- 1/4 teaspoon fine sea salt
- 1 teaspoon vanilla extract, for the caramel sauce
Instructions
- Preheat the oven to 180°C (350°F).
- Prepare the tart crust by combining the flour, oil, water, and a pinch of salt in a bowl. Mix only until a ball of dough forms, avoiding excessive kneading so the pastry remains crisp.
- If the dough feels sticky, add a small amount of flour. If it is too dry, add a little extra water or oil.
- Lightly flour the work surface and roll out the dough. Transfer it to a tart pan or place it flat on a parchment-lined baking sheet. Prick the base gently with a fork.
- Peel, core, and thinly slice the apples. Toss them gently with lemon juice, brown sugar, cinnamon, and vanilla.
- Arrange the apple slices evenly over the pastry, overlapping them slightly for an attractive finish.
- Scatter the coarsely chopped walnuts over the apples and dot the surface with small pieces of butter.
- Bake for 35 to 40 minutes, or until the pastry is golden and the apples are tender but still hold their shape.
- While the tart bakes, prepare the caramel sauce. Place the granulated sugar in a heavy-bottomed saucepan over medium heat and allow it to melt until it reaches a deep amber color, gently swirling the pan as needed.
- Remove the saucepan from the heat and carefully stir in the butter. Slowly pour in the heavy cream while stirring, as the mixture will bubble vigorously.
- Stir in the sea salt and vanilla until the caramel is smooth. Return it briefly to low heat if needed to dissolve any hardened caramel.
- Allow the baked tart to cool slightly, then serve warm or at room temperature with the caramel sauce drizzled over individual slices.
Notes
- Use firm baking apples such as Granny Smith, Braeburn, Pink Lady, or Honeycrisp so the fruit keeps its shape during baking.
- Toast the walnuts briefly before using them for a deeper, nuttier flavor.
- Do not over-knead the pastry dough, as this can make the crust tough instead of crisp.
- Keep the caramel sauce separate until serving to prevent the pastry from becoming soggy.
- The tart can also be prepared as a rustic free-form tart by folding the pastry edges over the apples.
- For extra warmth, add a small pinch of nutmeg, ginger, or cardamom to the apple filling.
- Store leftover tart covered in the refrigerator and gently reheat it in the oven for the best texture.
