Instructions

  1. Preheat oven to 350°F (175°C) and grease two loaf pans or line with parchment paper.
  2. In a large bowl, whisk together 2 cups sugar, 4 cups flour, 2 tablespoons baking powder, and 1 teaspoon salt.
  3. In a separate bowl, beat 2 eggs, 2 cups milk, and 2/3 cup vegetable oil until combined.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in 1 cup diced apples and 1 tablespoon ground cinnamon.
  6. Pour the batter evenly into prepared loaf pans, filling each about two-thirds full.
  7. In a small bowl, mix 2/3 cup sugar with 1 teaspoon cinnamon and sprinkle over the top of each loaf.
  8. Gently swirl the topping into the batter with a knife to create a cinnamon ripple effect.
  9. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
