Description

  • 1/2 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar (for streusel)
  • 1/4 teaspoon ground cinnamon (for streusel)
  • 2 medium apples, peeled and diced
  • 2 tablespoons unsalted butter (for apple topping)
  • 2 tablespoons granulated sugar (for apple topping)
  • 1 tablespoon brown sugar (for apple topping)
  • 1/2 teaspoon ground cinnamon (for apple topping)
  • 1/8 teaspoon ground nutmeg (for apple topping)
  • 1/8 teaspoon ground cloves (for apple topping)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup standard muffin pan with paper liners.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press evenly into the bottoms of each muffin liner to form the crust. Set aside.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Add 1/2 cup sugar, eggs, vanilla extract, cinnamon, nutmeg, and cloves. Mix until creamy.
  4. Divide the cheesecake filling evenly over the crusts in the muffin cups.
  5. In a separate bowl, make the streusel by mixing flour, oats, brown sugar, 1/4 cup sugar, cinnamon, and cubed cold butter. Cut the butter into the dry ingredients until crumbly.
  6. Sprinkle the streusel evenly over the cheesecake batter.
  7. Bake for 16–20 minutes, or until centers are just set. Cool in pan before transferring to a wire rack. Remove liners when cool enough to handle.
  8. Meanwhile, prepare the apple topping: In a skillet, melt butter over medium heat. Add diced apples and cook for 2–3 minutes.
  9. Add sugars and spices. Cook until apples are tender, about 5–7 minutes. Let cool slightly.
  10. Top each cooled cheesecake bite with a spoonful of warm apple topping before serving.
