Instructions
- In a saucepan over medium heat, melt 2 tablespoons butter, then add sliced apples, brown sugar, cornstarch, and cinnamon. Cook for about 5 minutes until apples are soft and mixture thickens. Let cool completely.
- In another saucepan, heat granulated sugar until melted and amber in color. Remove from heat and stir in butter, then slowly add heavy cream. Mix in vanilla extract and salt. Allow caramel to cool.
- In a bowl, whisk together flour, baking powder, cinnamon, cornstarch, and salt.
- In a separate bowl, mix melted butter, brown sugar, granulated sugar, vanilla extract, and eggs until smooth.
- Gradually combine dry ingredients with wet ingredients until a soft dough forms. Let dough rest for 10 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop dough into balls, place on baking sheet, and press a small indentation in the center of each.
- Bake for 11 minutes, remove and press centers again, then bake an additional 1–3 minutes until edges are golden.
- Cool cookies completely, then brush with melted butter and coat with cinnamon-sugar mixture.
- Fill each cookie center with apple pie filling and drizzle with salted caramel before serving.
