  • 1 teaspoon baking powder

  • 2 cups grated zucchini

Instructions

  1. Preheat the oven to 325°F (163°C) and grease two 8×4 inch loaf pans.
  2. Grate the zucchini and chop the apples into small pieces.
  3. In a large bowl, mix together the flour, cinnamon, salt, baking powder, and baking soda.
  4. In a separate bowl, beat the eggs, oil, vanilla extract, and both sugars until smooth.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the grated zucchini, chopped apples, and walnuts. Be careful not to overmix.
  7. Let the batter sit for 5 minutes, then divide it into the prepared loaf pans.
