Description

  • 1 medium onion (about 1 cup, chopped)
  • 3 cloves garlic (minced)
  • 2 celery stalks (chopped)
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 medium potato (about 1 cup, diced)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons lemon juice
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 cup cream or plant-based cream (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until soft and translucent.
  2. Add minced garlic and chopped celery, cooking for 2–3 minutes until fragrant.
  3. Stir in diced potato and artichoke hearts, mixing well to combine.
  4. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  5. Remove from heat and let cool slightly, then blend using an immersion blender until smooth and creamy.
  6. Return soup to the pot and stir in lemon juice, thyme, parsley, salt, and pepper.
  7. Add cream if desired, then simmer for another 5 minutes to combine flavors.
  8. Serve warm and adjust seasoning as needed.
