- 2 tablespoons lemon juice
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 cup cream or plant-based cream (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until soft and translucent.
- Add minced garlic and chopped celery, cooking for 2–3 minutes until fragrant.
- Stir in diced potato and artichoke hearts, mixing well to combine.
- Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Remove from heat and let cool slightly, then blend using an immersion blender until smooth and creamy.
- Return soup to the pot and stir in lemon juice, thyme, parsley, salt, and pepper.
- Add cream if desired, then simmer for another 5 minutes to combine flavors.
- Serve warm and adjust seasoning as needed.
