Description

  • ¼ teaspoon salt
  • 3 medium cucumbers, thinly sliced
  • 2 to 3 tablespoons chopped roasted peanuts
  • 3 green onions, thinly sliced for garnish


Instructions

  1. In a small mixing bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, red pepper flakes, minced garlic, sesame seeds, and salt to taste.
  2. Slice the cucumbers thinly and add them to a large bowl.
  3. Sprinkle the cucumbers with a bit of salt and let them sit for 15-20 minutes to draw out excess moisture. Rinse and pat dry.
  4. Pour the dressing over the cucumbers and toss to coat.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Before serving, sprinkle chopped peanuts over the salad and garnish with thinly sliced green onions.

  • To reduce the water content of the cucumbers, always salt and let them rest before adding to the salad.
