Description

This creamy asparagus soup is a fresh and comforting vegetable soup made with tender asparagus, aromatic fennel, onion, garlic, and potatoes blended into a silky texture. Finished with herbs and sour cream for balance, it delivers a light yet flavorful bowl that highlights the natural taste of spring asparagus while remaining easy enough for a weeknight meal.

  • 1 1/2 pounds fresh asparagus, trimmed and chopped
  • 1 large onion, diced
  • 1 small fennel bulb, cored and diced
  • 3 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1/2 pound Yukon Gold or yellow potatoes, thinly sliced
  • 6 cups vegetable broth or water
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons fresh tarragon, chopped
  • 1/3 cup fresh basil or parsley, chopped
  • 1/2 cup sour cream
  • 1/4 cup blanched asparagus tips for garnish
  • 1 tablespoon olive oil or fennel oil for garnish


Instructions

  1. Heat 3 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Add the diced onion and fennel and sauté for about 5–6 minutes until softened.
  2. Add the chopped garlic and cook for another 1–2 minutes until fragrant.
  3. Pour in 6 cups vegetable broth or water, then add the sliced potatoes, kosher salt, and white pepper. Stir and bring to a gentle boil.
  4. Reduce the heat, cover, and simmer for 15–20 minutes until the potatoes are tender.
  5. Add the chopped asparagus and cook for 2–3 minutes until bright green and just tender.
  6. Remove the pot from heat and allow the soup to cool slightly.
  7. Using an immersion blender or regular blender, puree the soup in batches until completely smooth while adding the fresh tarragon and basil or parsley.
  8. Return the blended soup to the pot and warm gently over low heat without boiling.
  9. Stir in 1/2 cup sour cream and mix until the soup becomes creamy and smooth.
  10. Serve hot and garnish with asparagus tips and a drizzle of olive oil or fennel oil.

Notes

  • Do not overcook the asparagus, as it may lose its bright green color and fresh flavor.
  • If using a blender, blend the soup in small batches and allow steam to escape safely.
  • For a vegan version, substitute the sour cream with 1/3 cup soaked raw cashews blended into the soup.
  • A small squeeze of lemon juice can brighten the flavor if the soup tastes too mild.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently over low heat.
