  • 2 12-ounce bags frozen cauliflower florets
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup pork rind panko (or regular panko for non-keto)
  • 1/4 cup cooked, crumbled bacon
  • 2 tablespoons chopped green onions
  • 1 teaspoon seasoned salt (or your favorite seasoning)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with silicone or parchment paper.
  2. Steam the frozen cauliflower according to package directions. Once steamed, let it cool to a safe handling temperature.
  3. Place the cauliflower onto a clean dish towel and squeeze out as much moisture as possible.
  4. Transfer the dried cauliflower to a food processor and pulse until finely chopped.
  5. In a mixing bowl, combine the cauliflower with the egg, cheddar cheese, pork rind panko, green onions, bacon, and seasoned salt. Stir to combine.
  6. Using a tablespoon, scoop the mixture and form it into tot-sized portions.
  7. Place the tots on the prepared baking sheet, leaving space between each one.
  8. Lightly spray the tops of the tots with cooking spray.
  9. Bake for 20-25 minutes, or until the tots are golden brown and crispy on the outside.
