- 3/4 cup barbecue sauce
- 1/4 cup brown sugar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1 medium red onion, finely chopped
- 1 medium green bell pepper, finely chopped
- 8 slices bacon
- 1/2 teaspoon salt (for serving)
- 1/4 teaspoon black pepper (for serving)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate and reserve some bacon grease in the skillet.
- Add the chopped red onion and green bell pepper to the skillet and sauté for 2 to 3 minutes until softened.
- In a large mixing bowl, whisk together the barbecue sauce, brown sugar, smoked paprika, and garlic powder.
- Stir in the baked beans along with the sautéed onions and peppers until well combined.
- Transfer the mixture to a 3-quart baking dish and spread evenly.
- Bake for 2 hours.
- While the beans bake, chop the cooked bacon. Reserve a small portion for garnish.
- Stir the remaining chopped bacon into the bean mixture and continue baking for 45 to 60 minutes, or until the sauce reaches the desired consistency.
- Remove from the oven and let the baked beans rest for 5 to 10 minutes.
- Top with the reserved bacon, salt, and black pepper before serving.
Notes
- For extra flavor, add 1 tablespoon Dijon mustard or Worcestershire sauce.
- Maple syrup can be substituted for part of the brown sugar.
- Yellow or white onion may be used instead of red onion.
- Allow the beans to rest after baking to help the sauce thicken.
