- 10 large raw prawns, peeled and tail-on
- 2 medium vine tomatoes, roughly chopped
- 1 lemon, zest and juice
- 1/4 cup olive oil
- 2 cloves garlic, crushed
- 1 pinch chili flakes
- 1 teaspoon dried oregano (preferably Sicilian)
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 125 grams firm feta cheese, broken into large pieces
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 200°C (390°F) fan bake.
- In a mixing bowl, toss the prawns with the chopped tomatoes, lemon zest and juice, olive oil, garlic, chili flakes, oregano, salt, and pepper.
- Transfer the prawn mixture to a medium-sized shallow ovenproof baking dish.
- Break the feta into chunks and nestle them among the prawns in the dish.
- Spoon any remaining juices over the top and add a final grind of pepper.
- Bake for 15 minutes, or until prawns are just cooked through and feta is slightly golden.
- Remove from the oven and sprinkle with chopped parsley before serving.
