Description

Ingredients

  • 6 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon butter, cut into small pieces
  • 1 double pie crust (top and bottom)
  • 1 egg white
  • 3 tablespoons water


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash, hull, and slice the strawberries into bite-sized pieces and place them in a large mixing bowl.
  3. Add sugar, cornstarch, salt, cinnamon, nutmeg, and lemon juice to the strawberries and mix well.
  4. Let the mixture sit for 10 minutes to release natural juices.
  5. Roll out one pie crust and place it into a pie dish, pressing it gently into the edges.
  6. Pour the strawberry mixture into the crust and spread evenly. Dot with butter pieces.
  7. Cover with the second pie crust or create a lattice top. Cut slits if using a full crust.
  8. Whisk together egg white and water, then brush over the top crust.
  9. Bake for 35–40 minutes until the crust is golden brown and the filling is bubbling.
  10. Remove from oven and allow the pie to cool completely before slicing to let the filling set.

  • If the filling seems too watery, drain a small amount of liquid before baking.
  • Cover the edges of the crust with foil during baking to prevent over-browning.
