- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 double pie crust (top and bottom)
- 1 egg white
- 3 tablespoons water
Instructions
- Preheat your oven to 400°F (200°C).
- Wash, hull, and slice the strawberries into bite-sized pieces and place them in a large mixing bowl.
- Add sugar, cornstarch, salt, cinnamon, nutmeg, and lemon juice to the strawberries and mix well.
- Let the mixture sit for 10 minutes to release natural juices.
- Roll out one pie crust and place it into a pie dish, pressing it gently into the edges.
- Pour the strawberry mixture into the crust and spread evenly. Dot with butter pieces.
- Cover with the second pie crust or create a lattice top. Cut slits if using a full crust.
- Whisk together egg white and water, then brush over the top crust.
- Bake for 35–40 minutes until the crust is golden brown and the filling is bubbling.
- Remove from oven and allow the pie to cool completely before slicing to let the filling set.

- If the filling seems too watery, drain a small amount of liquid before baking.
