Ingredients
Scale
- 1 cup mashed ripe bananas (about 2-3 bananas)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk, warmed (about 110°F)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 2 large eggs
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened (for filling)
- 1/2 cup packed brown sugar (for filling)
- 2 teaspoons ground cinnamon
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened (for icing)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- In a small bowl, combine warm milk with a pinch of sugar and sprinkle yeast over the top. Let it sit for 5–10 minutes until foamy.
- In a large bowl, whisk together mashed bananas, sugar, melted butter, and eggs until smooth.
- Add the activated yeast mixture to the banana mixture and stir to combine.
- Gradually add flour and salt, mixing until a soft dough forms.
- Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise for 1–2 hours or until doubled in size.
- Mix softened butter, brown sugar, and cinnamon to prepare the filling.
- Roll the dough into a rectangle about 1/4 inch thick.
- Spread the filling evenly over the dough and roll tightly into a log.
- Slice into 12 equal rolls and place in a greased baking dish.
- Cover and let rise again for 30–45 minutes until puffy.
- Preheat oven to 350°F (175°C) and bake for 20–25 minutes until golden brown.
- Beat cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Spread icing over warm rolls and serve.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
- Do not overheat the milk to avoid killing the yeast.
- A slightly sticky dough will yield softer rolls.
- You can prepare the rolls the night before and bake in the morning.
- Store leftovers in an airtight container for up to 2 days or refrigerate for longer freshness.
