Description

Moist and flavorful Banana Zucchini Bread made with ripe bananas, finely grated zucchini, warm cinnamon, chocolate chips, and optional walnuts. It is an easy quick bread that works well for breakfast, snacks, or dessert.

Instructions

  1. Preheat the oven to 350°F and grease a standard loaf pan with oil or butter.
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, salt, and sugar.
  3. Finely grate the zucchini, then wrap it in a clean kitchen towel and squeeze out the excess moisture.
  4. In a separate bowl, beat together the eggs, mashed bananas, oil, and vanilla extract until well combined.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold in the grated zucchini, chocolate chips, and optional walnuts without overmixing the batter.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack and let it cool before slicing.

Notes

  • Use very ripe, heavily spotted bananas for the best sweetness and moisture.
  • Squeeze excess liquid from the grated zucchini to prevent a dense or soggy loaf.
  • Do not overmix the batter, as this can make the bread tough.
  • Semi-sweet chocolate chips provide a balanced sweetness, but dark chocolate chips may also be used.
  • Store the bread in an airtight container at room temperature for 2 to 3 days or refrigerate it for 5 to 7 days.
