Soft, fluffy Banana Zucchini Muffins made with ripe bananas, finely grated zucchini, warm cinnamon, and vanilla. These moist dairy-free muffins are perfect for breakfast, snacks, or using up extra summer zucchini.

- 2 cups finely grated zucchini, from one 8 to 9-inch zucchini
- 2 very ripe bananas, about 1 cup mashed
- 2 large eggs
- 1 cup avocado oil or vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup granulated sugar, about 200 grams
- 2 cups all-purpose flour, about 240 grams
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 to 2 teaspoons cinnamon sugar, optional for topping
Instructions
- Preheat the oven to 350°F and line a standard 12-cup muffin tin with parchment or paper liners.
- Finely grate the zucchini using the small holes of a box grater.
- Place the grated zucchini in a clean kitchen towel and squeeze firmly over the sink to remove as much excess moisture as possible. Set aside.
- Peel the bananas and mash them with a fork in a large mixing bowl until mostly smooth.
- Add the eggs, avocado oil, vanilla extract, and granulated sugar to the mashed bananas. Whisk until well combined.
- Stir the squeezed zucchini into the wet mixture until evenly distributed.
- In a separate medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and gently stir just until combined. Do not overmix.
- For extra rise and fluffiness, optionally let the batter rest for 10 to 15 minutes.
- Divide the batter evenly among the prepared muffin cups, filling each slightly more than three-quarters full, about 1/3 cup batter per muffin.
- Sprinkle the tops with cinnamon sugar if desired.
- Bake for 24 to 26 minutes, or until the tops are rounded and golden and a toothpick inserted into the center comes out without wet batter.
- Let the muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

- Use very ripe, heavily spotted bananas for the best sweetness and banana flavor.
- Finely grating the zucchini helps it blend into the muffin crumb.
- Squeeze the zucchini thoroughly to prevent soggy or dense muffins.
- Do not overmix the batter after adding the flour, as this can make the muffins tough.
