Description

Basil Lemon Pasta Salad is a light and refreshing dish, combining the tangy flavor of lemon with the aromatic freshness of basil. Perfect for spring and summer gatherings, it’s a simple and delicious recipe that’s easy to prepare and full of vibrant flavors.

Ingredients

Scale
  • 1 pound pasta (campanelle, fusilli, penne, or your choice)
  • 1/4 cup white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 8 cracks of black pepper (to taste)
  • 1/3 cup pine nuts
  • 1/2 cup fresh parmesan shavings
  • 1/4 cup fresh basil, thinly sliced

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and rinse with cold water to stop the cooking process.
  2. Make the dressing: In a jar, combine white wine vinegar, olive oil, and lemon juice. Shake until well combined.
  3. Combine ingredients: In a large mixing bowl, toss the cooled pasta with the dressing. Add pine nuts, parmesan cheese, fresh basil, and cracked black pepper. Toss everything together.
  4. Marinate: Refrigerate the salad for at least 2 hours to let the flavors meld and enhance.

Notes

  • Ensure the pasta is cooked al dente to prevent it from becoming mushy.
  • Rinse the pasta with cold water after draining to stop the cooking process.
  • Let the salad marinate for at least 2 hours for the best flavor.
  • You can substitute pine nuts with walnuts or almonds if preferred.
  • For a vegan option, omit the parmesan or use a plant-based cheese alternative.
