Description
Batter Fruit Cobbler is a simple, comforting dessert made with a soft, cake-like batter and juicy fruit. As it bakes, the batter rises through the fruit to create a golden crust with a tender interior, making it perfect for any occasion.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup butter, melted
- 4 cups fresh or canned fruit (such as peaches, berries, or mixed fruit), drained if canned
- 1/4 cup white sugar (for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Stir in the milk until the batter is smooth.
- Pour the melted butter into a 9×13-inch baking dish and tilt to coat the bottom evenly.
- Pour the batter over the butter without stirring.
- Evenly distribute the fruit over the batter, allowing it to sink slightly.
- Sprinkle the remaining 1/4 cup sugar over the top.
- Bake for 45 minutes to 1 hour, or until the top is golden brown and the batter is set.
- Let cool slightly before serving.
Notes
- Do not stir the batter and butter layers to achieve the correct cobbler texture.
- Drain canned fruit well to avoid excess moisture.
- Add a splash of milk if reheating to keep it moist.
- Serve warm with vanilla ice cream or whipped cream for best flavor.
- Adjust sugar depending on the sweetness of the fruit used.
