Instructions
- Season the beef tips with salt and black pepper, then coat evenly with flour.
- Heat butter in a large skillet over medium-high heat and sear the beef on all sides until browned. Remove and set aside.
- In the same skillet, add diced onion and cook for 2 minutes while scraping up browned bits.
- Transfer the beef and onions to a slow cooker or Instant Pot.
- Add mushrooms, garlic powder, onion powder, thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and beef stock.
- For slow cooker: cook on low for 6-7 hours or high for 3-4 hours. For Instant Pot: cook on high pressure for 35 minutes, then allow natural release for 10 minutes.
- Mix cornstarch with water to create a slurry, then stir into the pot 30 minutes before finishing (or after pressure cooking).
- Cook until the gravy thickens to desired consistency.
- Remove bay leaf, adjust seasoning with salt and pepper, and serve hot.
