Description

Berry Nectarine Salad is a refreshing summer fruit salad made with juicy nectarines, fresh raspberries, blueberries, and a light cream cheese dressing infused with sweet fruit juices, lemon, and ginger. Perfect as a side dish, brunch addition, or healthy dessert.

Ingredients

Scale
  • 4 medium nectarines, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground ginger
  • 3 ounces reduced-fat cream cheese, softened
  • 2 cups fresh raspberries
  • 1 cup fresh blueberries

Instructions

  1. Place the sliced nectarines in a large mixing bowl.
  2. Add the sugar, lemon juice, and ground ginger. Toss gently until the nectarines are evenly coated.
  3. Cover and refrigerate for 1 hour, stirring once during chilling.
  4. Drain the nectarines and reserve all accumulated juices in a separate bowl.
  5. In a medium bowl, gradually beat the reserved fruit juices into the softened cream cheese until smooth and creamy.
  6. Gently combine the nectarines, raspberries, and blueberries in a serving bowl.
  7. Serve the fruit mixture with the cream cheese dressing on the side or lightly drizzled over the top.

Notes

  • Use ripe but firm nectarines for the best texture.
  • Fresh berries are recommended for optimal flavor and appearance.
  • Keep the dressing separate until serving if making ahead.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Greek yogurt may be substituted for cream cheese for a lighter version.
