Description

Bird’s Nest Mini Oreo Cheesecakes are creamy bite-sized cheesecakes baked in muffin cups with a whole Oreo cookie crust, cookies-and-cream filling, and topped with chocolate shavings and candy eggs to resemble a festive bird’s nest. These adorable mini desserts are perfect for Easter gatherings, spring celebrations, or any occasion that calls for a fun and delicious chocolate cheesecake treat.

  • 24 Oreo chocolate sandwich cookies, divided
  • 340 g (12 oz) cream cheese, softened
  • 80 g (1/3 cup) sour cream
  • 100 g (1/2 cup) granulated sugar
  • 1 teaspoon pure vanilla extract (5 ml)
  • 2 large eggs
  • 40 g (1.5 oz) milk chocolate bar, finely shaved or chopped
  • 36 mini candy-coated chocolate eggs (such as Cadbury Mini Eggs)


Instructions

  1. Preheat the oven to 350°F (175°C) and line 18 muffin cups with paper liners.
  2. Place one whole Oreo cookie in the bottom of each lined muffin cup to create the crust.
  3. Chop 6 Oreo cookies into small pieces and set aside for the cheesecake filling.
  4. In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy.
  5. Add the sour cream and continue beating until the mixture becomes light and fluffy.
  6. Mix in the granulated sugar and vanilla extract until fully incorporated.
  7. Add the eggs one at a time, mixing well after each addition until the batter is smooth.
  8. Fold the chopped Oreo pieces gently into the cheesecake batter.
  9. Divide the cheesecake mixture evenly among the muffin cups over the Oreo crusts.
  10. Bake for 18–20 minutes or until the centers are set and slightly puffed.
  11. Remove the pan from the oven and allow the cheesecakes to cool in the pan for 10 minutes.
  12. Transfer the cheesecakes to a cooling rack and allow them to cool completely.
  13. Refrigerate the mini cheesecakes for at least 3 hours to fully set.
  14. Before serving, sprinkle each cheesecake with shaved or chopped milk chocolate to resemble a bird’s nest.
  15. Top each cheesecake with two candy-coated chocolate eggs and serve chilled.
