- 40 g (1.5 oz) milk chocolate bar, finely shaved or chopped
- 36 mini candy-coated chocolate eggs (such as Cadbury Mini Eggs)
Instructions
- Preheat the oven to 350°F (175°C) and line 18 muffin cups with paper liners.
- Place one whole Oreo cookie in the bottom of each lined muffin cup to create the crust.
- Chop 6 Oreo cookies into small pieces and set aside for the cheesecake filling.
- In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy.
- Add the sour cream and continue beating until the mixture becomes light and fluffy.
- Mix in the granulated sugar and vanilla extract until fully incorporated.
- Add the eggs one at a time, mixing well after each addition until the batter is smooth.
- Fold the chopped Oreo pieces gently into the cheesecake batter.
- Divide the cheesecake mixture evenly among the muffin cups over the Oreo crusts.
- Bake for 18–20 minutes or until the centers are set and slightly puffed.
- Remove the pan from the oven and allow the cheesecakes to cool in the pan for 10 minutes.
- Transfer the cheesecakes to a cooling rack and allow them to cool completely.
- Refrigerate the mini cheesecakes for at least 3 hours to fully set.
- Before serving, sprinkle each cheesecake with shaved or chopped milk chocolate to resemble a bird’s nest.
- Top each cheesecake with two candy-coated chocolate eggs and serve chilled.
