  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh lemon juice


Instructions

  1. Remove the bison New York strip loin steaks from the refrigerator 20–30 minutes before cooking so they come closer to room temperature.
  2. Pat the steaks dry with paper towels to remove moisture, which helps create a better sear.
  3. Season both sides of the steaks evenly with kosher salt and freshly ground black pepper.
  4. Heat a heavy skillet or cast-iron pan over medium-high heat and add the olive oil.
