Description
Bisquick Blackberry Cobbler is a quick and comforting dessert made with juicy blackberries and a golden, buttery biscuit topping. This easy recipe uses simple pantry ingredients and delivers a perfect balance of sweet and tart flavors in every bite.
Ingredients
Scale
- 4 cups blackberries (fresh or frozen)
- 1 tablespoon cornstarch
- 2/3 cup granulated sugar (divided)
- 1 teaspoon lemon juice
- 2 tablespoons water (only if using fresh blackberries)
- 1 1/2 cups Bisquick mix
- 1/2 cup milk (whole or 2%)
- 3 tablespoons butter (grated, cold)
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine blackberries, cornstarch, 1/2 cup sugar, lemon juice, and water if using fresh berries. Cook over medium heat, stirring frequently until the mixture thickens and begins to boil.
- In a mixing bowl, combine Bisquick mix, remaining sugar, milk, and grated butter. Stir until a thick batter forms.
- Pour the blackberry mixture into a baking dish or skillet and spread evenly.
- Drop spoonfuls of the Bisquick batter over the fruit filling and gently press slightly into the mixture.
- Bake for 25 minutes or until the topping is golden brown and the filling is bubbling.
- Remove from the oven and let cool for 10 minutes before serving.
Notes
- Use frozen blackberries without thawing for best texture.
- Grate cold butter for easier mixing and a flakier topping.
- Avoid overmixing the batter to keep the topping light and tender.
- Store leftovers in the refrigerator for up to 4 days.
- Reheat in the oven for best results instead of the microwave.
