Ingredients
Scale
- 2/3 cup (60 g) black cocoa powder
- 2 cups (250 g) all-purpose flour
- 1 1/2 cups (300 g) granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups (325 ml) vegetable or canola oil
- 1 cup (235 ml) buttermilk, room temperature
- 1 tablespoon white vinegar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup (220 g) unsalted butter, room temperature
- 1 cup (210 g) vegetable shortening
- 2 to 3 cups (240 to 360 g) powdered sugar
- 1 1/2 cups (150 g) black cocoa powder
- 1 teaspoon vanilla extract for the buttercream
- 1 teaspoon white food coloring, optional
- 1/2 teaspoon water, optional
- White nonpareil sprinkles, optional
- Paper bat decorations, optional
Instructions
- Preheat the oven to 350°F (175°C). Grease three 6-inch round cake pans and line the bottoms with parchment paper.
- In a large bowl, whisk together the black cocoa powder, all-purpose flour, granulated sugar, salt, and baking soda until evenly combined.
- In a separate bowl, whisk together the vegetable oil, room-temperature buttermilk, white vinegar, eggs, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients while whisking gently. Switch to a spatula as the batter thickens and fold just until smooth. Do not overmix.
- Divide the batter evenly among the three prepared cake pans.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the cakes in their pans for about 20 minutes. Turn them onto cooling racks, remove the parchment paper, and cool completely. Chill for about 1 hour before decorating for easier assembly.
- To prepare the black cocoa buttercream, beat the softened butter and vegetable shortening together until smooth and creamy.
- Gradually beat in 2 cups of powdered sugar, followed by the black cocoa powder and vanilla. Add additional powdered sugar as needed until the frosting is thick enough to spread and hold the cake layers securely.
- Level the cooled cake layers if necessary. Place one layer on a serving plate and spread an even layer of buttercream over the top. Repeat with the second layer and finish with the third layer.
- Chill the stacked cake for about 20 minutes to stabilize the layers.
- Cover the top and sides of the cake with the remaining black cocoa buttercream and smooth the surface. Refrigerate briefly to allow the frosting to firm.
- For optional Halloween decorations, combine the white food coloring with the water. Use a clean food-dedicated brush to lightly flick the mixture over the chilled black frosting to create a starry splatter effect.
- Add small pinches of white nonpareil sprinkles around the cake and finish with optional paper bat decorations. Remove all non-edible decorations before slicing.
- Slice the Black Velvet Halloween Cake and serve.
Notes
- Bring the eggs and buttermilk to room temperature before mixing for a smoother, more evenly baked cake.
- For accurate results, weigh the flour and cocoa powder when possible. If using measuring cups, spoon the dry ingredients into the cups and level them rather than scooping directly from the container.
- Avoid overmixing the batter after adding the wet ingredients, as excessive mixing can make the cake dense or tough.
- Do not frost the cake until the layers are completely cool.
- Dutch-process cocoa can be used when black cocoa is unavailable, but the cake will have a lighter color and somewhat different flavor.
- Two 8-inch or 9-inch round pans may be used instead of three 6-inch pans. Begin checking the larger layers after about 30 minutes; they generally bake in approximately 30 to 35 minutes.
- To make homemade buttermilk, remove 1 tablespoon from 1 cup of whole milk and replace it with 1 tablespoon of white vinegar. Let stand for 10 minutes. Keep the additional tablespoon of vinegar required separately for the cake batter.
- The cooled cake layers can be wrapped securely and refrigerated for up to 2 days before assembly.
- Keep paper bats, floral wire, and all other non-edible decorations separate from portions being served and remove them before slicing.
