Description

This easy Blackberry Cobbler features juicy, sweet-tart blackberries baked תחת a buttery, golden topping that’s soft inside and slightly crisp on top. Perfect for a comforting homemade dessert served warm with ice cream.

Ingredients

Scale
  • 6 cups fresh blackberries
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (from 1 small lemon)
  • 3 tablespoons all-purpose flour (for filling)
  • 3/4 cup all-purpose flour (for topping)
  • 2/3 cup granulated sugar (for topping)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 1 cup vanilla ice cream (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, gently mix blackberries, sugar, lemon juice, lemon zest, and flour until evenly coated.
  3. Transfer the mixture into the prepared baking dish and spread evenly.
  4. In another bowl, combine flour, sugar, baking powder, and salt for the topping.
  5. Add melted butter and vanilla extract, then mix until a soft dough forms.
  6. Flatten small portions of the dough and place them over the blackberry filling, leaving some gaps.
  7. Bake for 30–35 minutes until the topping is golden and the filling is bubbling.
  8. Remove from oven and let cool for 15 minutes to allow the filling to thicken.
  9. Serve warm with vanilla ice cream if desired.

Notes

  • Fresh blackberries are recommended for best texture and flavor.
  • If using frozen berries, add an extra tablespoon of flour to thicken the filling.
  • Adjust sugar depending on the sweetness of the berries.
  • Let the cobbler rest before serving to help the juices set.
  • Store leftovers covered in the refrigerator for up to 2 days.
  • Reheat individual servings in the microwave or oven before serving.
