Description

This Blueberry Cobbler is a warm, comforting dessert made with juicy blueberries baked תחת a soft, golden cake-like topping. With hints of lemon zest and cinnamon, it’s an easy homemade treat perfect for any season.

Ingredients

Scale
  • 5 cups fresh blueberries (about 28 oz)
  • 1 lemon, zest only
  • 1/3 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 large egg
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
  2. Wash and dry the blueberries, then combine them with sugar, lemon zest, and flour in a bowl. Mix well.
  3. Spread the blueberry mixture evenly in the prepared baking dish.
  4. In another bowl, whisk together egg, milk, sugar, vanilla extract, and melted butter until smooth.
  5. Add flour, baking powder, cinnamon, and salt to the wet mixture and whisk until fully combined.
  6. Let the batter rest for 10 minutes.
  7. Spoon the batter evenly over the blueberries, leaving small gaps for the filling to bubble through.
  8. Bake for 30–35 minutes, until the top is golden brown and the filling is bubbling.
  9. Remove from oven and let cool slightly before serving.

Notes

  • Frozen blueberries can be used without thawing.
  • Letting the batter rest improves texture and fluffiness.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Reheat in the microwave in 30-second intervals until warm.
  • Serve with vanilla ice cream or whipped cream for best flavor.
