Description

  • 2 unbaked 9-inch pie crusts
  • 2 1/2 cups diced rhubarb
  • 1 1/2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, cut into small pieces
  • 1 egg white, beaten
  • 1 teaspoon granulated sugar for topping


Instructions

  1. Preheat the oven to 375°F (190°C). Place one pie crust into a deep-dish 9-inch pie plate and press gently into the bottom and sides.
  2. In a large mixing bowl, combine diced rhubarb, blueberries, 1/2 cup sugar, cornstarch, lemon juice, and cinnamon. Stir until evenly coated.
  3. Pour the fruit mixture into the prepared pie crust and spread evenly.
  4. Dot the filling with small pieces of butter.
  5. Place the second pie crust over the filling. Trim excess dough and crimp the edges together securely.
  6. Cut several small slits into the top crust to allow steam to escape during baking.
  7. Brush the top crust with beaten egg white and sprinkle with 1 teaspoon sugar.
  8. Bake for 40 to 45 minutes or until the crust is golden brown and the filling is bubbling.
  9. Remove the pie from the oven and allow it to cool completely before slicing and serving.

  • Frozen blueberries can be used without thawing.
