Description

This blueberry spinach salad with honey balsamic dressing is a fresh, vibrant, and healthy dish made with tender spinach, sweet blueberries, crunchy pecans, dried cranberries, and creamy feta cheese, all tossed in a simple homemade honey balsamic dressing.

Ingredients

Scale
  • 3 cups fresh spinach (about 90g)
  • 1/2 cup fresh blueberries (75g)
  • 1/2 cup dried cranberries (60g)
  • 1/2 cup pecans, chopped (60g)
  • 1/2 cup feta cheese, crumbled (75g)
  • 1 tbsp olive oil (15ml)
  • 1 tbsp water (15ml)
  • 3 tbsp honey (60ml)
  • 2 tbsp balsamic vinegar (30ml)

Instructions

  1. Wash and thoroughly dry the fresh spinach, then place it in a large mixing bowl.
  2. Add the fresh blueberries evenly over the spinach.
  3. Sprinkle in the dried cranberries for added sweetness and texture.
  4. Add the chopped pecans, optionally toasted for extra flavor.
  5. Top with crumbled feta cheese, distributing it evenly.
  6. In a small jar, combine olive oil, water, honey, and balsamic vinegar.
  7. Secure the lid tightly and shake well until the dressing is fully blended.
  8. Pour the honey balsamic dressing over the salad just before serving.
  9. Toss gently to coat all ingredients evenly without crushing the berries.
  10. Serve immediately for best freshness and texture.

Notes

  • Do not add dressing until ready to serve to prevent soggy spinach.
  • Toast pecans lightly for enhanced flavor and crunch.
  • Store dressing separately in a sealed container for up to 4 days.
  • Substitute feta with goat cheese for a creamier taste.
  • Use maple syrup instead of honey for a vegan option.
