- 12 slices sourdough or white sandwich bread
- 6 tbsp unsalted butter, softened (about 1 tbsp per sandwich)
- 24 tsp green cilantro chutney (about 4 tsp per sandwich)
- 2 medium russet potatoes, boiled and thinly sliced
- 2 plum tomatoes, thinly sliced
- 1 medium cucumber, thinly sliced
- 1 medium red onion, thinly sliced
- 2 cups grated cheese (Amul, mozzarella, cheddar, or Mexican blend)
- 2-3 tbsp chaat masala, or to taste
Instructions
- Boil the potatoes until tender, then peel and slice them into thin rounds.
- Prepare or gather the green cilantro chutney.
- Thinly slice the tomatoes, cucumber, and onion.
- Spread butter evenly over two slices of bread.
- Spread a generous layer of cilantro chutney over the butter.
- Arrange a layer of boiled potato slices on one slice and sprinkle with chaat masala.
- Add sliced tomatoes followed by grated cheese.
- Sprinkle another light layer of chaat masala.
- Add cucumber slices and onion slices.
- Finish with another light sprinkle of chaat masala and close the sandwich with the second slice of bread.
- Preheat a grill pan, sandwich press, or cast-iron skillet over low heat.
- Lightly butter the outside of the sandwich.
- Grill for about 5 minutes until golden brown.
- Flip and grill the second side for another 5 minutes.
- Cook for an additional 2-3 minutes if needed until the cheese has melted completely.
- Slice into halves or quarters and serve hot with ketchup, green chutney, or chili sauce.
