Description

  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 6 cups vegetable or beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 2 tablespoons fresh dill, chopped
  • 12 tablespoons vinegar or lemon juice


Instructions

  1. Prepare all vegetables by peeling, chopping, and grating as needed.
  2. Heat olive oil in a large pot over medium heat and sauté the onion until translucent.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in carrots and cook for 3–4 minutes until slightly softened.
  5. Add grated beets and cook for 5–7 minutes to develop flavor.
  6. Mix in tomato paste and cook for 2 minutes, stirring well.
  7. Pour in the broth and add potatoes, cabbage, and bay leaves.
  8. Bring to a boil, then reduce heat and simmer for 20–30 minutes until vegetables are tender.
  9. Add vinegar or lemon juice, then season with salt and pepper.
  10. Remove bay leaves, stir in fresh dill, and let the soup rest for a few minutes before serving.
