Description

  • 4-5 peaches, cored and cut into wedges, skin left on
  • 1 stick (8 tbsp) butter, softened
  • 1 ¼ cups sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • ¼ cup almond flour
  • 3 tbsp bourbon
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tsp baking powder
  • ¼ cup water


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch cake pan with parchment paper. Butter or oil the parchment to prevent the cake from sticking.
  2. Arrange the peach slices in a circular pattern, starting from the center and working your way out.
  3. In a saucepan, combine ¼ cup of water and ½ cup of sugar. Heat over medium-high heat without stirring until the sugar turns amber. Once it does, remove it from heat and quickly stir in 1 tablespoon of bourbon. Pour this caramel over the arranged peaches in the cake pan.
  4. In a mixing bowl, beat the butter and ¾ cup sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and 2 tablespoons of bourbon.
  5. In a separate bowl, whisk together the all-purpose flour, almond flour, cinnamon, and baking powder. Gradually add the dry ingredients to the wet ingredients and mix until well incorporated.
  6. Pour the cake batter over the peach and caramel mixture, smoothing the surface with a spatula.
  7. Bake for 30-35 minutes or until a toothpick or knife comes out clean when inserted into the center of the cake.
  8. Allow the cake to cool for 15-30 minutes before flipping it out of the pan onto a serving plate.
