Ingredients
Scale
- 1 1/4 cups warm water
- 1 tbsp heaping yeast
- 1 tbsp heaping sugar
- 2 tsp salt
- 4 tbsp oil
- 3 3/4 cups flour
- 2 cups sausage gravy
- 3 cups Monterey Jack Colby cheese (or half mozzarella and cheddar cheese)
- 9 scrambled eggs
- Pinch of ground sage (optional)
Instructions
- Prepare the pizza dough: In a mixing bowl, whisk together warm water, yeast, sugar, salt, and oil. Let sit for 5 minutes until foamy. Gradually add the flour and mix until a dough forms. Knead until the dough is smooth and no longer sticky.
- Divide the dough into two portions and spread each portion into a well-greased cast-iron skillet.
- Spread 1 cup of sausage gravy over each pizza dough. Then, sprinkle each pizza with 1 1/2 cups of cheese and top with 9 scrambled eggs. Optionally, sprinkle ground sage on top for added flavor.
- Preheat the oven to 500°F (260°C). Bake the pizzas for 7-10 minutes, or until the crust is golden brown and the cheese is melted.
Notes
- Make ahead: The pizza dough and sausage gravy can be made in advance and stored in the fridge for a quicker morning meal.
- Freezing: You can freeze the sausage gravy in 2-cup portions for future use.
- For a quicker pizza dough, you can use store-bought pizza dough or biscuit dough.
- To make scrambled eggs: Beat 9 eggs with a splash of milk, season with black pepper, and cook until soft-set in a skillet.
