Description

Broccoli Apple Salad is a fresh, crunchy, and creamy side dish made with crisp broccoli florets, sweet apples, dried cranberries, and a tangy homemade dressing. It’s quick to prepare, packed with texture, and perfect for picnics, potlucks, or healthy everyday meals.

Ingredients

Scale
  • 4 cups fresh broccoli florets (chopped into bite-sized pieces)
  • 2 medium apples (about 2 cups, diced)
  • 1/4 cup red onion (finely chopped)
  • 1/2 cup dried cranberries
  • 1/3 cup sunflower seeds or chopped walnuts
  • 1/2 cup cooked bacon pieces (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the broccoli thoroughly, then cut into small bite-sized florets.
  2. Dice the apples into small cubes, leaving the skin on for extra crunch and color.
  3. Finely chop the red onion and set aside.
  4. In a large mixing bowl, combine broccoli, apples, red onion, dried cranberries, and sunflower seeds or nuts.
  5. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
  6. Pour the dressing over the salad mixture and gently toss until evenly coated.
  7. Add cooked bacon pieces if using and mix well.
  8. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  9. Stir before serving and adjust seasoning if needed.

Notes

  • Use crisp apple varieties like Honeycrisp or Fuji for best texture.
  • Soak chopped red onion in cold water for a milder flavor.
  • For a healthier version, substitute half or all of the mayonnaise with Greek yogurt.
  • Add nuts or seeds just before serving to maintain crunch.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
