Ingredients
Scale
- 4 cups fresh broccoli florets (chopped into bite-sized pieces)
- 2 medium apples (about 2 cups, diced)
- 1/4 cup red onion (finely chopped)
- 1/2 cup dried cranberries
- 1/3 cup sunflower seeds or chopped walnuts
- 1/2 cup cooked bacon pieces (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry the broccoli thoroughly, then cut into small bite-sized florets.
- Dice the apples into small cubes, leaving the skin on for extra crunch and color.
- Finely chop the red onion and set aside.
- In a large mixing bowl, combine broccoli, apples, red onion, dried cranberries, and sunflower seeds or nuts.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
- Pour the dressing over the salad mixture and gently toss until evenly coated.
- Add cooked bacon pieces if using and mix well.
- Cover and refrigerate for at least 30 minutes to allow flavors to blend.
- Stir before serving and adjust seasoning if needed.
Notes
- Use crisp apple varieties like Honeycrisp or Fuji for best texture.
- Soak chopped red onion in cold water for a milder flavor.
- For a healthier version, substitute half or all of the mayonnaise with Greek yogurt.
- Add nuts or seeds just before serving to maintain crunch.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
