Description

Broccoli Cheddar Orzo is a creamy one-pot pasta dish made with tender orzo, fresh broccoli, and rich cheddar cheese. This comforting recipe is quick, easy, and perfect for a cozy weeknight meal with minimal cleanup.

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups broccoli florets (fresh or frozen)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/2 cup milk or heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon mustard powder (optional)

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add chopped onion and cook for 3–4 minutes until soft and translucent.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in the orzo pasta and toast for 1–2 minutes, stirring frequently.
  4. Pour in the broth and bring to a gentle simmer. Cook while stirring occasionally until the orzo is nearly tender.
  5. Add broccoli florets and continue cooking for 3–5 minutes until tender but still vibrant.
  6. Reduce heat to low and stir in milk or cream.
  7. Add shredded cheddar cheese gradually, stirring until melted and smooth.
  8. Season with salt, black pepper, and mustard powder. Mix well and adjust seasoning if needed.
  9. Let the dish rest for 2 minutes before serving to thicken slightly.

Notes

  • Use freshly shredded cheese for a smoother and creamier sauce.
  • Add extra milk or broth when reheating to restore the creamy texture.
  • Do not overcook the broccoli to keep its bright color and slight crunch.
  • Stir frequently to prevent the orzo from sticking to the pot.
  • You can add cooked chicken or chickpeas for extra protein.
