- 4 cups chopped fresh broccoli florets
- 1 (10 oz) can of cream of chicken soup
- 1 cup mayonnaise or Miracle Whip
- 1/4 cup melted butter (1/2 stick)
- 2 large eggs, slightly beaten
- 1/2 medium yellow onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups extra sharp cheddar cheese, shredded
- 1/2 sleeve Ritz crackers, crushed
Instructions
- Preheat your oven to 350°F (175°C).
- Steam the broccoli in a steaming basket for 5 minutes until tender but firm enough to poke with a fork. Be careful not to overcook.
- Chop the steamed broccoli into bite-sized pieces and place in a medium mixing bowl.
- In the same bowl, add the cream of chicken soup, mayonnaise, melted butter, eggs, onion, salt, and pepper. Stir everything together.
- Mix in 3/4 cup of the shredded cheddar cheese into the broccoli mixture.
- Spray an 8×8-inch baking dish with cooking spray and transfer the broccoli mixture into the dish.
- Top the casserole with the remaining 3/4 cup of cheddar cheese and the crushed Ritz crackers.
- Bake for 30 minutes or until the cheese is melted and the top is golden brown.
Notes
- If using frozen broccoli, make sure to thaw and drain it well to prevent excess moisture.
- You can prepare the casserole up to step 7 and refrigerate for up to 3-4 days before baking.
- For a healthier version, you can use low-fat mayonnaise and reduced-fat cheese.
- If you want to make it a full meal, add 1 cup of cooked rice or some diced chicken.
