Description

Broccoli Cheese Casserole is a creamy, cheesy side dish that’s perfect for any occasion. With tender broccoli, sharp cheddar cheese, and a crispy cracker topping, it’s a family favorite that’s easy to make and irresistible to everyone at the table.


Ingredients

  • 4 cups chopped fresh broccoli florets
  • 1 (10 oz) can of cream of chicken soup
  • 1 cup mayonnaise or Miracle Whip
  • 1/4 cup melted butter (1/2 stick)
  • 2 large eggs, slightly beaten
  • 1/2 medium yellow onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups extra sharp cheddar cheese, shredded
  • 1/2 sleeve Ritz crackers, crushed


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the broccoli in a steaming basket for 5 minutes until tender but firm enough to poke with a fork. Be careful not to overcook.
  3. Chop the steamed broccoli into bite-sized pieces and place in a medium mixing bowl.
  4. In the same bowl, add the cream of chicken soup, mayonnaise, melted butter, eggs, onion, salt, and pepper. Stir everything together.
  5. Mix in 3/4 cup of the shredded cheddar cheese into the broccoli mixture.
  6. Spray an 8×8-inch baking dish with cooking spray and transfer the broccoli mixture into the dish.
  7. Top the casserole with the remaining 3/4 cup of cheddar cheese and the crushed Ritz crackers.
  8. Bake for 30 minutes or until the cheese is melted and the top is golden brown.

Notes

  • If using frozen broccoli, make sure to thaw and drain it well to prevent excess moisture.
  • You can prepare the casserole up to step 7 and refrigerate for up to 3-4 days before baking.
  • For a healthier version, you can use low-fat mayonnaise and reduced-fat cheese.
  • If you want to make it a full meal, add 1 cup of cooked rice or some diced chicken.
  • Ensure the crackers are added just before baking to maintain their crunch.
