Description
Soft and chewy Brown Butter Pumpkin Oatmeal Cookies made with nutty browned butter, pumpkin puree, old-fashioned oats, warm fall spices, and sweet chocolate chips.
Ingredients
- Unsalted butter
- Pumpkin puree
- Old-fashioned oats
- All-purpose flour
- Brown sugar
- Granulated sugar
- Egg yolk
- Vanilla extract
- Baking soda
- Ground cinnamon
- Pumpkin pie spice
- Salt
- White chocolate chips or chocolate chips
Instructions
- Place the butter in a saucepan over medium heat. Melt and continue cooking, stirring frequently, until the butter turns golden brown and smells nutty. Remove from the heat and allow it to cool slightly.
- Combine the cooled brown butter with the brown sugar, granulated sugar, pumpkin puree, egg yolk, and vanilla extract. Mix until smooth and well combined.
- In a separate bowl, combine the all-purpose flour, old-fashioned oats, baking soda, cinnamon, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the pumpkin mixture and stir just until combined. Do not overmix.
- Fold in the white chocolate chips or chocolate chips. If the dough is very soft, chill it briefly before baking.
- Scoop portions of cookie dough onto a lined baking sheet, leaving enough room between the cookies for spreading.
- Bake until the edges are set while the centers remain slightly soft. The cookies will continue to set as they cool.
- Allow the cookies to cool on the baking sheet briefly before transferring them to a cooling rack. Serve once set.
Notes
- Watch the butter carefully while browning because it can quickly go from golden brown to burned.
- Use plain pumpkin puree rather than sweetened pumpkin pie filling.
- Avoid overmixing the dough after adding the flour to keep the cookies tender.
- Chilling overly soft dough can help control spreading during baking.
- Store cooled cookies in an airtight container at room temperature for several days.
- Cookies or portioned cookie dough can be frozen for longer storage.
