  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup peach nectar or peach juice
  • 1 lb (about 34) fresh peaches, peeled and chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup heavy cream
  • 1 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 1 1/2 cups confectioner’s sugar, sifted


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking pan.
  2. In a large bowl, mix the yellow cake mix, eggs, vegetable oil, and peach nectar until smooth and fully combined.
  3. Fold in the chopped peaches gently to distribute evenly throughout the batter.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  6. While the cake bakes, combine butter, heavy cream, and brown sugar in a saucepan over medium heat. Stir continuously until the mixture comes to a boil.
  7. Remove from heat and stir in vanilla extract and sifted confectioner’s sugar. Whisk until smooth.
  8. If needed, return frosting to low heat briefly to loosen.
  9. Pour the warm frosting evenly over the hot cake, spreading quickly as it sets fast.
  10. Allow the cake to cool and the icing to set before slicing and serving.
