Instructions

  1. Combine flour, brown sugar, and salt in a bowl. Add cold butter and rub it into the flour until the mixture resembles coarse breadcrumbs.
  2. Add ice-cold water gradually and mix until a dough forms. Shape into a disc, wrap, and chill for 1 to 2 hours.
  3. Prepare the frangipane filling by mixing softened butter and brown sugar until creamy. Add the egg and ground almonds, then mix until combined.
  4. Slice the peaches and combine them with lemon juice, vanilla extract, caster sugar, and cornflour. Allow the mixture to rest briefly.
  5. Roll out the chilled pastry into a large circle on baking paper, keeping the dough about 5 mm thick.
  6. Spread the frangipane filling in the center of the pastry, leaving a border around the edges. Arrange peach slices over the filling.
  7. Fold the pastry edges over the peaches, brush with egg wash, and sprinkle with demerara sugar.
  8. Bake at 180°C (170°C fan) for 30 to 35 minutes until the crust is golden and the filling is set.
  9. Cool slightly, brush the peaches with peach or apricot jam, and serve warm or at room temperature.
