  • 2 minced garlic cloves
  • 1/3 cup torn fresh basil leaves
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon red wine vinegar (or balsamic)
  • 2 tablespoons olive oil
  • 1 baguette, cut diagonally into 1/2-inch slices
  • Extra virgin olive oil for drizzling
  • 1/2 cup balsamic vinegar
  • 3 tablespoons brown sugar
  • Optional: parmesan cheese


Instructions

  1. Prepare the Tomato Mixture: Combine diced tomatoes and a pinch of salt in a bowl. Let the mixture sit for 20-30 minutes to release excess moisture. Once drained, add minced garlic, chopped basil, black pepper, red wine vinegar, and olive oil. Stir gently and let the mixture sit at room temperature for another 20-30 minutes.
  2. Toast the Baguette Slices: Preheat your oven to 400°F (200°C). Brush both sides of the baguette slices with olive oil and arrange them on a parchment-lined baking sheet. Toast for 5 minutes, flip, and bake for an additional 2-3 minutes or until golden brown and crispy.
  3. Make the Balsamic Glaze: In a small saucepan, combine balsamic vinegar and brown sugar. Bring to a simmer over medium heat for 10 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let cool.
  4. Assemble the Bruschetta: Spoon the tomato mixture onto each toasted baguette slice. Arrange on a platter and drizzle with the balsamic glaze. Optionally, sprinkle with grated Parmesan cheese.
  5. Serve and Enjoy: Serve immediately while the bread is still crispy and the topping fresh.

  • Ensure to drain the tomato mixture well to avoid soggy bruschetta.
