- 1 head cauliflower, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons unsalted butter, melted (or plant-based alternative)
- 2/3 cup buffalo hot sauce
Instructions
- Preheat oven to 450°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, whisk together flour, water, garlic powder, salt, and pepper to form a smooth batter.
- Add cauliflower florets and toss until evenly coated. Shake off excess batter.
- Spread coated cauliflower on the baking sheet in a single layer.
- Bake for 15 minutes, flipping halfway through.
- In a separate bowl, mix melted butter and buffalo sauce.
- Remove cauliflower from the oven and toss in the buffalo sauce mixture.
- Return to the oven and bake for another 25–30 minutes, flipping halfway through, until browned and crispy.
- Let cool for 5–10 minutes before serving. Serve with ranch or blue cheese dressing and celery sticks.

- For vegan, substitute butter with olive oil or plant-based butter.
