Description

These Burger Bowls are a healthy, deconstructed version of a classic burger, packed with lean beef mince, crispy potato chips, fresh lettuce, pickles, and topped with a homemade burger sauce. It’s the perfect meal for those craving the flavors of a cheeseburger but without the extra carbs.   • 500 grams lean beef mince
  • 2-3 medium potatoes, washed and cut into chips
  • 2 tablespoons olive oil, divided
  • Shredded lettuce
  • Dairy-free or regular cheese (optional)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon dijon mustard
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Mix the spice mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper.
  2. Prepare the potatoes: Wash and cut potatoes into chips or wedges. Pat them dry using a paper towel to remove excess moisture.
  3. Toss the potatoes: Place the potato chips in a large bowl, toss with 1 tablespoon of olive oil, and sprinkle half of the spice mix over them. Mix well to coat the potatoes evenly.
  4. Cook the potatoes: Preheat your air fryer or oven. Air fry the potatoes at 200°C (390°F) for 20 minutes, shaking halfway through. Alternatively, bake in the oven for 30-40 minutes until crispy.
  5. Cook the beef: In a frying pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the beef mince, breaking it apart with a wooden spoon. Cook until browned, then add the remaining spice mix and cook until the meat is fully browned and any excess moisture is evaporated.
  6. Make the burger sauce: In a small bowl, combine mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Taste and adjust seasoning as needed.
  7. Assemble the Burger Bowls: Divide the crispy potatoes between your bowls. Add shredded lettuce, followed by the cooked beef mince, cheese (if using), and pickle slices. Drizzle with the burger sauce and serve immediately.

Notes

  • For a lighter version, substitute regular potatoes with sweet potatoes or even zucchini fries.
  • Make the sauce ahead of time to save on prep time.
  • If you want to meal prep, store the beef, potatoes, and sauce separately and reassemble the bowls fresh.
