Description

Burst Tomato Basil Butter Beans are a quick, flavorful, and healthy dish made with creamy butter beans, burst tomatoes, fresh basil, and vegan cream cheese. Perfect for a satisfying vegan and gluten-free meal.


Ingredients

  • 2 tablespoons olive oil
  • 10 ounces cherry or grape tomatoes
  • 1/2 teaspoon truffle salt or regular salt (add more as desired)
  • 1/4 teaspoon ground black pepper (add more as desired)
  • 1 medium shallot, finely diced
  • 3 cloves garlic, minced
  • 15 ounces can of butter beans (including their liquid)
  • 2 tablespoons vegan cream cheese
  • 1/2 cup fresh basil, chopped


Instructions

  1. Heat the olive oil in a wide, shallow pan over medium heat. Add the tomatoes, salt, and pepper. Cook the tomatoes for 5-8 minutes until they burst and release their juices. Press them down with a spatula to release more juice if needed.
  2. Add the finely diced shallot and minced garlic to the pan. Sauté for about 3 minutes until fragrant.
  3. Pour in the butter beans with their liquid. Stir together and bring to a simmer. Cook for about 5 minutes to soften the beans and reduce some of the liquid.
  4. Add the vegan cream cheese and stir it into the mixture until fully combined and creamy.
  5. Turn off the heat and stir in the fresh basil. Adjust seasoning with salt and pepper as needed.
  6. Serve warm with toast or over your choice of rice, pasta, or quinoa.

Notes

  • Ensure to press the tomatoes down if they don’t fully burst to release their juices.
  • For a richer texture, add more vegan cream cheese or a bit more olive oil.
  • Leftovers can be stored in the fridge for 3-4 days or frozen for up to 1 month. Reheat gently to restore the creamy texture.
