- 2 tablespoons olive oil
- 10 ounces cherry or grape tomatoes
- 1/2 teaspoon truffle salt or regular salt (add more as desired)
- 1/4 teaspoon ground black pepper (add more as desired)
- 1 medium shallot, finely diced
- 3 cloves garlic, minced
- 15 ounces can of butter beans (including their liquid)
- 2 tablespoons vegan cream cheese
- 1/2 cup fresh basil, chopped
Instructions
- Heat the olive oil in a wide, shallow pan over medium heat. Add the tomatoes, salt, and pepper. Cook the tomatoes for 5-8 minutes until they burst and release their juices. Press them down with a spatula to release more juice if needed.
- Add the finely diced shallot and minced garlic to the pan. Sauté for about 3 minutes until fragrant.
- Pour in the butter beans with their liquid. Stir together and bring to a simmer. Cook for about 5 minutes to soften the beans and reduce some of the liquid.
- Add the vegan cream cheese and stir it into the mixture until fully combined and creamy.
- Turn off the heat and stir in the fresh basil. Adjust seasoning with salt and pepper as needed.
- Serve warm with toast or over your choice of rice, pasta, or quinoa.
Notes
- Ensure to press the tomatoes down if they don’t fully burst to release their juices.
- For a richer texture, add more vegan cream cheese or a bit more olive oil.
- Leftovers can be stored in the fridge for 3-4 days or frozen for up to 1 month. Reheat gently to restore the creamy texture.
