Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with non-stick spray.
  2. In a large bowl, mix flour and powdered icing sugar. Cut in the cold, cubed butter using a pastry cutter or hands until pea-sized pieces form.
  3. If the mixture is too crumbly, add 1–2 tablespoons of cold water until it holds together when pressed.
  4. Press the crust mixture firmly and evenly into the prepared pan. Bake for 10 minutes and set aside to cool slightly.
  5. In a microwave-safe bowl, melt 1/2 cup unsalted butter. Whisk in the brown sugar until smooth.
  6. Add eggs one at a time, whisking thoroughly after each addition.
  7. Stir in the white vinegar and vanilla extract until fully combined. Fold in raisins if using.
  8. Pour the filling over the pre-baked crust and spread evenly.
  9. Bake for 25–30 minutes until the filling is set but slightly jiggly in the center.
  10. Cool completely at room temperature, then refrigerate for at least 4 hours before slicing into squares.
