Description

These classic Canadian Butter Tarts feature a flaky pastry shell filled with a rich, gooey, caramelized filling. Whether made with or without raisins, this recipe is easy, quick, and absolutely delicious — perfect for the holidays or any special occasion.

Ingredients

Scale
  • 1/4 cup soft butter: Adds richness and a smooth texture to the filling
  • 1/4 cup brown sugar: Provides deep, caramel-like sweetness
  • 1/2 cup corn syrup: Creates the gooey texture characteristic of butter tarts
  • 1 large egg, lightly beaten: Binds the filling and adds structure
  • 1 pinch salt: Balances the sweetness and enhances flavor
  • 1/2 cup raisins (optional): Adds chewiness and a fruity twist
  • 12 pre-made tart shells: Holds the filling and bakes into a crisp shell

Instructions

  1. Preheat your oven to 375°F (190°C) and arrange the tart shells on a baking sheet.
  2. In a mixing bowl, combine the soft butter, brown sugar, corn syrup, beaten egg, and salt.
  3. Use an electric mixer or whisk to blend until the mixture is smooth and creamy.
  4. If using raisins, stir them into the filling mixture evenly.
  5. Spoon the filling into each tart shell, filling them about 2/3 full to prevent overflow.
  6. Bake for 15 minutes, or until the filling is bubbling and the pastry is golden brown.
  7. Remove from the oven and let cool in the tray for 10 minutes before transferring to a wire rack.
  8. Allow the butter tarts to cool completely before serving for best texture.

Notes

  • Do not overfill the tart shells — the filling expands during baking.
  • Let the tarts cool completely for the filling to set properly.
  • Optional: Add chopped pecans or walnuts instead of raisins for a crunchy twist.
  • Use mini tart shells for bite-sized versions ideal for parties.
  • Can be made ahead and frozen for up to 3 months.
